Avocado and Lime Panna Cotta

 

A delicious contrast of sweet and zesty flavours

Ingredients 

  • 2 ripe avocados
  • Juice and zest of 2 limes
  • 2 tbsp sour cream
  • 200g/ml Creative Base

 

Method

  • Place the avocado, lime juice and zest and sour cream into a food processor and puree.
  • Whip the Creative Base on medium speed until it breaks down to a cream consistency
  • Fold the avocado mix through the Creative Base until all ingredients are combined
  • Pour the mixture into small moulds and place in the fridge to set, for approximately 1 hour
  • To serve, turn out one panna cotta per person, and garnish with a few drizzles of olive oil

 


Add your own touch

The panna cotta is great alongside fresh coleslaw or for a more sophisticated dish, serve with fresh seafood such as a white crab salad
