Blue Cheese Relish

 

 

A very versatile recipe, it can be a dip, a spread or a dressing. Ideal as an accompaniment for meat and fish dishes, or enjoy on its own with a chunk of bread.

 

Serves about 10

Ingredients

  • 200g blue cheese, such as Blue Stilton, Gorgonzola or Roquefort
  • 2 garlic cloves, crushed
  • 2 tbsp lemon juice
  • 1 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 500ml Millac Gold
  • 6 spring onions, finely chopped
  • 150g toasted hazelnuts, roughly chopped
  • Small bunch of parsley, finely chopped
  • Salt and freshly milled black pepper
  • Viva Whole Milk

  

Method

  • Crumble the cheese into a bowl and mix in the crushed garlic, lemon juice, wine vinegar and oil.
  • Slowly stir in the Millac Gold, spring onions, hazelnuts and parsley. Season to taste and chill until ready to use as a dip or a spread.
  • Alternatively, to make into a dressing, slowly mix in sufficient Viva Whole Milk to give a thinner consistency suitable for pouring. Chill until ready to use and spoon over salad leaves.

 


Add your own touch

Just before serving stir in some chopped crisp bacon and scatter over croûtons of bread.

 

Serve with

Fresh salads ‘on the side', with cooked smoked salmon, trout or shell fish. Add a spoonful to burgers, filled wraps and baguettes.
