A fool that is cool
Serves about 10
Ingredients
- 700g dessert plums, halved and stoned
- 3 tbsp clear honey
- 150ml unsweetened orange juice
- 300ml Roselle Supreme
- 400ml prepared custard
- Toasted flaked almonds, to decorate
- Icing sugar, to sprinkle
Method
- Put the prepared fruit and honey into a pan, pour over the orange juice, cover and cook gently until the plums are soft and very little juice remains.
- Remove from the heat, spoon into a blender or food processor and blend until smooth. Leave until cold - if the plums are very tart sweeten with a little extra honey.
- Pour the Roselle Supreme into a large bowl and whisk until soft peaks form.
- Gently fold in the custard and plum purée.
- Spoon into individual serving glasses and chill until ready to use.
- Decorate with toasted almonds and sprinkle over a little icing sugar.
Add your own touch
Replace the plums with greengages, cherries or apricots. Try using chocolate custard. Spoon the mixture on to warmed pancakes or sweet waffles.
