Plum Fool

A fool that is cool

 

Serves about 10

 

Ingredients

  • 700g dessert plums, halved and stoned
  • 3 tbsp clear honey
  • 150ml unsweetened orange juice
  • 300ml Roselle Supreme
  • 400ml prepared custard
  • Toasted flaked almonds, to decorate
  • Icing sugar, to sprinkle

 

 

 

 

 

 

 

 

 

 

 

Method

  • Put the prepared fruit and honey into a pan, pour over the orange juice, cover and cook gently until the plums are soft and very little juice remains.
  • Remove from the heat, spoon into a blender or food processor and blend until smooth. Leave until cold - if the plums are very tart sweeten with a little extra honey.
  • Pour the Roselle Supreme into a large bowl and whisk until soft peaks form.
  • Gently fold in the custard and plum purée.
  • Spoon into individual serving glasses and chill until ready to use.
  • Decorate with toasted almonds and sprinkle over a little icing sugar.

 


Add your own touch

Replace the plums with greengages, cherries or apricots. Try using chocolate custard. Spoon the mixture on to warmed pancakes or sweet waffles.
