Macaroni Cheese with Broccoli (Fortified Recipe for Care Homes)

Serves: 10
Ingredients
- 700g macaroni pasta
- 200g broccoli, broken into small florets
- 45g Lakeland Dairies Butter
- 60g plain flour
- 200ml Millac Classic Milk Powder (or similar product), prepared according to directions
- 1 litre Millac Gold
- 200g mature Cheddar cheese, grated
- 75g wholemeal breadcrumbs
Method
Pre-heat the oven to 190˚C or gas mark 5.
Prepare the macaroni pasta according to pack instructions. This should take about 10 minutes.
4 minutes before the end of the cooking time, stir in the broccoli florets. Drain and run under cold water to stop the pasta sticking together.
For the cheese sauce, heat the Lakeland Dairies Butter in a medium pan and gradually add the flour, stirring constantly for 1 minute on a low heat.
Mix the Millac Gold and Milk Powder (or similar product) together. Slowly add the mixture to the roux, still stirring to prevent any lumps. Simmer for 3-4
minutes, stirring until the sauce has thickened.
Off the heat, mix in the cheese and allow it to melt.
Mix the cheese sauce with the macaroni and broccoli and transfer into a large ovenproof dish.
Sprinkle breadcrumbs over the top and bake for 15-20 minutes until golden.
