Loaded Sweet Potato

Serves: 12


  • 6 large sweet potatoes
  • 200g sliced spring onions
  • 200g diced red pepper
  • 200g pancetta (diced and cooked)
  • 200g grated cheese
  • 500ml Millac Gold Single
  • Cornish sea salt
  • Freshly milled pepper


Bake the sweet potatoes in a hot oven until cooked

Remove from the oven and allow to cool slightly before cutting in half lengthwise

Scoop out the potato and place into a bowl

Add the spring onions, peppers, pancetta and cheese

Season well and stir in the Millac Gold Single

Place filling back into the skin and bake until golden brown

Serve half a potato per portion with a few mixed leaves
